Ya know, instead of Jimmy Crack Corn? Whatever that even means!
So. The other evening, I embraced the cool(er) weather that we are having and tried my hand at something new....
a home made chicken pot pie!
I love CPP's, but I have never made one from scratch. It was a challenge that I was ready to face, so I tightened the straps on my apron, furrowed my brow and went for it.
Okay, so I didn't even wear an apron, but it sounded better like that. Honesty gets the better of me sometimes.
I was surprised at how un-complicated making a chicken pot pie is! The most time consuming part is chopping, dicing and slicing all of your veggies.

How funny - I just noticed you can see my little toesies in this picture! Look carefully. If you can find them you win.

Anyway, back to the food and not my toes...isn't it funny how I tried to be fancy with the crust? I am silly.

Are you dying to make one yet? If so - by all means, do it! I double dog dare ya. Here is the recipe. It's a cinch!
Ingredients:
2 pie crusts (Um...er...I mean...I made my own. Not really. I bought the pre-made kind. Ban me from the kitchen, for I am a cheater.)
2 cups of cooked chicken meat (I took some boneless, skinless tenders, cooked them in a skillet with S&P and then shredded.)
2 carrots - cut in to small chunks
2 stalks of celery - small chunks
1 cup of green peas (I used frozen)
1 potato - small chunks
1/2 onions - finely diced
1 cloves of garlic
1 can cream of chicken
salt and pepper to taste
1 egg - beaten
1) Heat up the pan and lightly brown the onion and garlic. Then add in the celery and carrots, saute for 2 minutes.
2) Add in cream of chicken and add in about 2 cups of water. Mixed well and bring to boil and add in the potatoes. Continue to simmer until potatoes soften and add in the chicken and green peas.
3) Stir well, cook until sauce thickens. Check seasoning. Dish out and let it cool. (I didn't let it cool - I let the sauce thicken while the bottom pie crust was baking.)
4) Pre-heat the oven to 375 degree F. Place the first pie crust in the pie pan and bake as directed on the package. (If you made your own crust, you are on your own for #4 because you are an overachiever.)
5)Put in the filling and cover the top with another piece of roll out pastry and crimp the edges. Cut a few slits on top of the pastry for venting air. (Or you can be like me and make it fancy schmancy on top and you can look back and laugh at yourself for being ridiculous.)
6)Brush the top of the pastry with beaten egg (mixed with 1 Tbs. water) and bake in the oven for 40-45 minutes or until filling is bubbling and the crust is golden brown.
(You don't have to do this, but it makes the crust prettier and golden-er. Yes, I just said goldener.)
7) Let it cool down for 10-15 minutes before serving. (I didn't let it cool because I am bad to the bone.)

Your chicken pot pie looks wonderful, and I love the crust. It looks very pretty! I agree with Tanya, chicken pot pie is the ultimate comfort food. I might have to make some tonight. (Although where I live, the weather is in the 90s so not exactly pot pie weather. Oh well, I will just turn down the air for dinner!)

Looks great! I've made chicken pot pie - except I did my pie crust from scratch. I only did that because pot pie sounded REALLY good and I don't keep store-bought pie crust in the house (why - I don't know!). I'm not a good pie crust maker - this I've realized. I guess the crust didn't taste bad - it was all very good. I just didn't make enough of the crust so the pot pie bubbled up and out of the pie plate. Oh well :) When I'm feeling like something pot pie-ish but don't want to make a crust, I pretty much make the filling, put it in a 13x9 pan, and drop biscuit dough in clumps on top of it. Bake it and you have something that resembles chicken and dumplings. SOOOOOOOOO good!

ReplyDeleteYou can always use frozen mixed veggies for your pot pie without guilt; they're picked at the peak of freshness, so they still have lots of vitamins. Makes for a faster weeknight meal!

Pot pies are a great way to use left over meat. I make one every year after Thanksgiving. I usually roll out the crust to cover the top. I think next time I'll do the lattice on top; yours looks so pretty!

ReplyDeleteI must say that I do so love cp's but my hubby doesn't! So I make them for myself and the kids when he is at the fire station. Quick tip. By vegall in the can. It has all the veggies carrots, potatoes etc. already chopped up! It is divine!
